Over the weekend I had this beautiful 2018 Fess Parker Pinot Noir @fessparkerwinery from Sta. Rita Hills. It had flavors of light red fruits, earthy mushrooms, and was very smooth & well balance. It was very easy to drink and I enjoyed it so much I decided make a quick appetizer and pair it with some homemade Truffle Goat Cheese Mushroom Crostini’s. Some Pinot Noir wines are known to carry aromas of red fruits (raspberries, strawberry and cherries), smoke and clove aromas that come from oak barrels. And if you decide to wait for your wine to develop over the years it can also take on characteristics of forest floor and mushrooms.

To create your own experience and give it a try you will follow the easy steps below. You will want to select a good goat cheese to use and most stores now have a nice selection to choose from. For this recipe we added the truffle flavor to add more earthiness to the recipe and to the pairing. The lightness of the Pinot Noir will go great with a soft goat cheese and the earthy aromas will give a savory flavor with the truffle pairing. You will want to avoid full reds as they will overwhelm the flavor of the crostini.

I obviously finished the bottle before I got to the main course, but if you still have some wine left. I would recommend a nice roasted pork, chicken or seared tuna for your main dish after the crostini appetizer.

Truffle Goat Cheese Mushroom Crostini

Ingredients

  • 1 lbs Mushrooms assorted
  • 5 oz Truffled goat cheese used Montchevre Betin Fresh Truffle Goat Cheese
  • 2 tsp Thyme fresh
  • 2 tbsp Spicy honey Mike's Hot Honey or Bees Knees
  • 2 tbsp Olive Oil
  • 1 Baguette
  • Salt & Pepper to taste

Instructions

Crostini Bread

  • Preheat oven to 350 degrees
  • Brush baguette slices with olive oil, then arrange on a sheet pan in a single layer
  • Bake for 12 min

Mushroom mix

  • Mix in a bowl the slices of mushrooms with the olive oil, thyme, salt, and pepper
  • Spread out on a sheet pan and bake them until browned and caramelized, about 15 minutes

Set up Crostini

  • Spread about a tablespoon of the goat cheese on each crostini
  • Top with mushrooms, honey, sprinkle fresh thyme
  • Pair with a Pinot Noir. ENJOY!
